A Vegan Tale

I don't eat meat. There, I said it. But it doesn't stop there. I don't do a lot of things involving the use of animals. I'm vegan.

In a nutshell, vegetarians don't eat meat, fish or poultry. Vegans are vegetarians who abstain from eating or using all animal products, including milk, dairy, eggs, wool, silk or leather. Over the years, variations on vegetarianism have arisen. The American Dietetic Association (ADA) describes the 3 most common types:

lacto-ovo-vegetarian - no animal products, but dairy and eggs are okay
lacto-vegetarian - no animal products, only dairy
vegan - no animal foods of any type

Among the many reasons for being a vegetarian are:

Environment. It takes up to 16 lbs. of grain to produce 1 lb. of beef; 3 to 6 lbs. to produce 1 lb. of turkey. By eating grain foods directly, I make the food supply more efficient which contributes to the environment.
Personal Health. Animal foods are higher in fat than most plant foods, particularly saturated fats. Plants don't contain cholesterol. Also, cow's milk is one of the most common allergens that affect an estimated 5% of the population ... and rising.
Religion.
Dislike of Meat.
Compassion For Animals.
Belief In Non-Violence

In 1991 (15 years ago), I became vegetarian. Literally overnight. Cold turkey. One day, while holding a chicken leg in one hand and stroking the furry head of my dog with the other, I realized something was terribly wrong. My stomach turned, I tossed aside the drumstick and never went back. Clearly my reason was an insane love for animals. More recently, I made the move to vegan.

Back then, I was pretty much limited to veggie burgers. Options today are endless. There are entire grocery stores dedicated to vegetarian foods. Foods, fortified, meeting all known nutritional needs. Most major markets have at least one section filled with non-meat (or faux meat) products - soy, wheat and tofu-derived foods.

It was only after I changed over that I realized the accompanying health benefits. The ADA says vegetarian diets are healthful and "aid in the prevention of several chronic degenerative diseases and conditions, including obesity, coronary artery disease, hypertension, diabetes and some types of cancer". As a fitness professional, I've been telling people for years that food is not the enemy. ADA states that the key to a healthy vegetarian diet, as with any other diet, is to "eat a wide variety of foods, including fruits, vegetables, whole grain products, nuts, seeds and legumes".

For most people, there is no compelling reason to eat meat. An emerging consensus among health organizations, government health agencies and nutritionists is that the best diets contain very little or no meat. In modern society, the only remaining justifications for killing animals for food is that people find meat to be convenient and/or that people enjoy the taste of it. In other words, meat provides convenience and pleasure.

The hardest part of being vegan? The questions - challenges. "What about protein?" "Animals were put here for our use". "Aren't your shoes leather?" "I'm sure lettuce screams when it's ripped from the ground". I urge everyone to do a little research. The results will surprise you.

Whatever your choices, know this: mind, body and spirit must happily co-exist for life. Health is not about what you eat, but more importantly, who you are. Friends make us laugh and meet our social needs. Movies are fun. Rock concerts. For some, having a large family is the answer. For others, walks along the beach. The sun. Travel. Whatever it takes, it's very personal and extremely individual. It's what's in your heart that's the greatest nutrient of all.

Vegetarianism satisfies me. When I wake up in the morning and see the mushed-in, scrunched-up face of my beautiful pug, I remember why I spend all that time reading labels. Why I avoid restaurants that don't serve the foods I eat. Why my heart is full every day. For me, it's about the small choices. And it doesn't take much.

Sinless Apple Strata

Cooking spray
4 Large thick slices of bread, cut into 1-inch cubes, divided
1 Package (8 ounces) reduced fat cream cheese, cut into small cubes
2 Medium apples, peeled, cored and chopped
1 1/2 cups of egg substitute
1 Cup skim milk
2 teaspoon of cinnamon
1 teaspoon vanilla extract
2 Tablespoon powdered sugar
Maple syrup if desired

** Spray 11x 7-inch baking dish with cooking spray
** Layer half of bread cubes on bottom of dish
** Cover evenly with the entire package of cream cheese
** Sprinkle with chopped apples

** Top evenly with remaining bread cubes
** Combine egg substitute, milk, vanilla and cinnamon
** Pour over bread mixture
** Cover with plastic wrap and refrigerate overnight
** Preheat oven to 375°F
** Bake 35 to 40 minutes uncovered until knife inserted in center comes clean
** Let stand 10 minutes
** Sprinkle with powdered sugar just before serving
** Serve with maple syrup if desired

Have you been longing to try a group fitness class but afraid you haven't got the stuff? Are you a Group Fitness Wallflower? Do you secretly watch the kickboxers, the yogis and yoginis, the body sculptors and the spinners leaving their classes in droves, their faces shining with accomplishment and effort and wished you were one of them?

Many of us avoid group fitness classes because we're afraid we won't be good enough, or because we feel we aren't in shape, we can't keep up to a music beat to save our lives, or fear we'll make a fool of ourselves.

As a Group Fitness Director and instructor in a facility with about 6,000 members and 100 group fitness classes a week, I am often approached by clients wondering how best to join a class. Spin seems to be the most daunting for people. I understand, because I was the same way. When I began this job three years ago, I had never taken a spin class, although I secretly longed to try it. I'd logged in many hours and miles cycling in and out of traffic from one end of New York City to another, and spent my childhood chugging up and flying down the hills of the Catskill mountains and through the woods on my bike. But from what I'd heard about Spin classes I figured I'd be lucky to survive it. I joined a commercial gym so that I could try my first Spin class in private rather than the facility where I work. Silly, but it was the only way I was going to do it. And guess what? Not only did I live, but I LOVED it. I took a

kajillion classes, eventually got certified, and now teach Beginning Spin to people who start out just like me, although they are braver, because they come to their first class at the corporate site, rather then hiding out where they won't be seen.

In the Spin classes that I teach, whenever a client finishes their first class, I tell them, "You did it! Now you never ever have to take your first class again". Because firsts are tough, first day of school, first day of work, most firsts make us a little anxious.

However, what we all usually find is that after we accomplish our "first" and we come back, we find ourselves feeling a sense of belonging, community and achievement. In the classes that I teach, Spin or Karate, I look forward to seeing the regulars as well as the newcomers, and a newcomer is only new once. We get to know each others strengths and weaknesses, and we share that sense of accomplishment that comes with honest hard work, sweat, and pushing our own physical envelopes.

If you haven't tried your first Group Fitness class yet, take the plunge. If you don't love it, try another one until you find one that fits. You do belong, and you deserve the fun and rewards that come with a class.
